Deviled Eggs

  • 6 hard-boiled egg , cut into halves
  • 4 Tbsp mayonnaise
  • 1 tsp curry powder
  • 1/2 tsp English mustard
  • 1/2 tsp tomato puree
  • sprig fresh watercresses , to garnish
  • fresh chives , chopped, to garnish
  • paprika , or cayenne, to garnish
Remove and sieve the egg yolks into a bowl; keep the whites on one side. Add the remaining ingredients and mix well to a smooth, soft paste. Pipe or spoon the mixture into the egg whites and arrange on a serving dish. Garnish with cress, chives and a sprinkling of paprika or cayenne.
